This is a very simple and easy to cook recipe of soup. I almost prepare it daily for everybody in my house. It fulfills daily requirement of vegetables in our diet. Good before evening dinner.
Ingredients
- Pumpkin 250 g
- Bottle gourd 250 g
- Tomato 1 medium
- Carrots 2 no
- Beet root 1/2
- Cabbage 1/4 th cup chopped
- Cauliflower 1/4 cup
- Onion 1 small
- Garlic 3-4 cloves
- Cinnamon stick 1/2 inch
- Black pepper 4-5
- Cloves 2
- Salt to taste
- Clarified Butter / pure ghee 1 tsp
Method
- Heat ghee in a pressure pan
- Add cinnamon, cloves and pepper
- When it starts to splitter add onions and garlic. saute for 1 min
- Add all the vegetables and saute for 2 mins
- Add enough water and pressure cook
- Let it cool. Blend it in a mixer grinder or a hand blender
- Add water, salt, lemon juice and olive oil and blend for few more secs
- Boil it and serve hot.
