This is my daughter’s recipe. She had prepared this spontaneously for Holi a couple of years back and it turned out awesome. Since then its a regular in our household. You can get creative and make changes according to your liking.
Ingredients
1 Whole Chicken Cleaned form inside out.
For the Marinate
- 1 tsp each Basil, Parsley, Oregano, Rosemary, Mint (Can use fresh herbs if available)
- Red Chili Flakes, Salt and Pepper as per taste
- Bunch of fresh Coriander leaves
- 10 to 12 Garlic cloves
- 1 Onion
- 2 tsp Extra Virgin Olive Oil
- ½ cup Red Wine for the paste and ½ cup to pour on top
Vegetables for Stuffing:
Carrot, Potatoes, Cherry Tomatoes, Asparagus, Zucchini, Broccoli, Green Peas, French Beans (For stuffing as well as aligning on the tray)
Preparation
- Preheat Oven at 200 degrees
- Make the Paste of above Ingredients and marinate the chicken inside out and vegies in the baking tray.
- Stuff the chicken with the veggies
- Pour ½ Cup Red wine on the top
- Marinate overnight
- Roast in the Oven for 1 hour.
