Salsa is of the Mexican sauce used as dips for tacos or tortillas. It is tomato based and includes ingredients like onions, chillies, acid and herbs. In this version of my recipe I have made this into a salad (kachumber) to go with my main dish. I did not blend the tomatoes but have chopped them as I did not want to use it as a dip! You can make this as a healthy dip by adding 2-3 tomatoes & blending coarsely. I am using this particular recipe for my salad because it has lots of colourful vegetables and I love its piquant taste!

- Tomatoes 1
- Onions 1
- Green, Yellow & Red peppers 3 Tbs
- Basil
- Parsley / Coriander
- Olive Oil 1 tsp
- Lemon Juice 1 tsp
- Black Pepper
- Rock Salt
- Mix Herbs
- Finely chopped red chillies/Chilli flakes
Method
- Chop all the vegetables finely (Blend for the dip)
- Add the dressing (Basil, coriander, Olive Oil, Lemon juice, black pepper, salt, herbs, chillies)
- Mix them together
