Recipe: Mediterranean egg scramble

Ingredients:
  • 6 egg whites and 2 whole eggs
  • ½ Cup Onion Chopped
  • ½ Cup chopped red bell pepper
  • ½ Cup chopped yellow bell pepper
  • ¼ Cup crumbled Feta Cheese
  • 1 Tsp Olive Oil
  • Salt and Pepper to taste
Method:
  • Heat a nonstick pan and brush olive oil on it
  • Add cooked onions and peppers and saute over medium-high heat until onions are soft for about 2-3 minutes. Add Salt and pepper according to your taste
  • In a small bowl, whisk together the egg whites and whole eggs. Pour them into pan. Scramble until cooked.
  • Divide egg mixture among 2 plates. Sprinkle 2 tablespoons feta cheese on top of each.
  • Serve with sliced tomatoes and 1 slice whole wheat toast, if desired.
  • Makes 2 servings
