This is a very healthy recipe for breakfast, good in protein and full of colorful veggies. You can also make it of sprouted whole moong/ mix sprouts or mix dals. You can use rice flour, semolina or corn flour to make the consistency thick and it becomes easy to bind.
Ingredients
- Green moong Dal 2 cups/ 250 g (Split green gram)
- Rice flour / Rawa (Semolina)2 tbs
- Vegetables-Bell peppers (all colors), Carrot, Cabbage, Onion, Tomatoes (seeds removed) 2cups (add of your choice)
- Cumin – Coriander powder 1 tsp
- Garlic 6-7 cloves
- Ginger ½ inch
- Green chilies 3-4
- Salt to taste
- Oil
Method
- Soak Moong dal for 2 hours in warm water
- Drain all the water and keep it in the strainer for 15 to 20 mins to allow the water to drain completely
- Cut the vegetables finely, and keep aside
- Grind together dal, ginger, garlic and green chilies coarsely without adding water
- Add all the spices, rice flour/semolina and salt to the dough
- Make 6 to 8 equal portions of the dough and same portions of mixed vegs separately
- Preheat the pan or tava and brush it with oil
- Now take one portion of each- dough and veg, mix together and make a 2” diameter pancake on a butter paper.
- Make a small hole in middle of the pan cake to make it more crispier.
- You can also make them directly on the pan without using butter paper. Do not heat the pan in this case. Just oil it.
- Cook the pancake on both sides till golden brown
- Serve hot with green chutney
