Ingredients:

6 egg whites and 2 whole eggs

½ Cup Onion Chopped

½ Cup chopped red bell pepper

½ Cup chopped yellow bell pepper

¼ Cup crumbled Feta Cheese

1 Tsp Olive Oil

Salt and Pepper to taste
Method:
- Heat a nonstick pan and brush olive oil on it
- Add cooked onions and peppers and saute over medium-high heat until onions are soft for about 2-3 minutes. Add Salt and pepper according to your taste
- In a small bowl, whisk together the egg whites and whole eggs. Pour them into pan. Scramble until cooked.
- Divide egg mixture among 2 plates. Sprinkle 2 tablespoons feta cheese on top of each.
- Serve with sliced tomatoes and 1 slice whole wheat toast, if desired.
